Mock Tuna Salad

Ingredients
  Tvp 1 1⁄2 Cup (24 tbs) (Or Dry Textured Soy Protein)
  Warm water 2⁄3 Cup (10.67 tbs)
  Carrots 2 , grated
  Celery stalks 3 , finely chopped
  Finely chopped fresh parsley 2 Tablespoon
  Finely chopped scallion 2 Tablespoon
  Firm tofu 1 Pound, drained
  Eggless mayonnaise 1 1⁄2 Cup (24 tbs)
  Tamari soy sauce 1 1⁄2 Tablespoon
  Prepared mustard 1 Tablespoon
  Lemon juice 1 Teaspoon
  Salt To Taste
  Pepper To Taste
Directions

Combine TVP and warm water in a large bowl. Add carrots, celery, parsley and scallion. Mix well. Crumble in tofu.
In a small bowl, mix together the eggless mayonnaise, tamari or soy sauce, mustard, lemon juice and salt and pepper. Add to large bowl. Mix thoroughly.
Refrigerate at least 1 hour.
