Roasted Pepper Salad

Ingredients
  Sweet pepper 8 Medium (Red Or Green)
  Salt 1⁄8 Teaspoon
  Black pepper 1 Pinch
  Garlic 1 Clove (5 gm), peeled and minced
  Minced parsley 2 Tablespoon
  Red wine vinegar 5 Teaspoon
  Olive oil/2 tablespoons each olive oil and vegetable oil, mixed 1⁄4 Cup (4 tbs)
  Lemon wedges 4
Directions

1. Preheat the broiler. Place the sweet peppers on their sides on the broiler pan and broil 2 inches from the heat, turning frequently, until the skins are blackened—about 20 minutes.
2. cool the peppers under cold running water, then peel, core, and seed them. Cut the peppers into strips about 1 inch wide and 2 inches long.
3. Arrange the strips of pepper on a dish, and sprinkle with the salt, black pepper, garlic, parsley, vinegar, and oil. Serve at room temperature, garnished with the lemon wedges.
