Mushroom and Pimento Salad

Ingredients
  Lemon juice 2 Tablespoon
  Red wine vinegar 2 Tablespoon
  White wine vinegar 2 Tablespoon
  Garlic 2 Clove (10 gm), crushed
  Chopped fresh basil 1 Tablespoon
  Chopped fresh parsley 1 Tablespoon
  Safflower oil 2 Tablespoon
  Pimentos 8 , sliced into strips
  Mushrooms 1 Cup (16 tbs), sliced
Directions

1. ln a medium bowl, mix together lemon juice, red vinegar, white vinegar, garlic, basil, parsley and oil, until well combined.
2. Stir in the pimentos and mushrooms, cover and chill for 3 hours. Serve chilled as a side dish.
