Julienne Celery and Pepper Salad
|Celery stalks||4 , cut into thin strips|
|Red pepper||1 , cut into thin strips|
|For mustard dressing|
|Olive oil||3 Tablespoon|
|White wine vinegar||2 Tablespoon|
|Dijon mustard||2 Teaspoon|
|Freshly ground black pepper||To Taste|
1. Blanch celery strips in a saucepan of boiling water for 10 seconds. Drain, then refresh under cold running water. Drain again.
2. To make dressing, place oil, vinegar, mustard and black pepper to taste in a screwtop jar. Shake well to combine. Arrange celery and red pepper on a serving plate and spoon dressing over.
