How To Make Country Potato Salad

A mouthwatering country potato salad for all you potato lovers. Add to the taste of your potatoes with great tasting ingredients and a garnish of celery and chives. A real delight!!
  Potatoes 2 Pound, peeled and cubed
  Mayonnaise 1⁄2 Cup (8 tbs)
  Apple cider vinegar 1 Tablespoon
  Ground black pepper 1⁄8 Teaspoon
  Celery 1⁄2 Cup (8 tbs), thinly sliced
  Red onion 1⁄2 Cup (8 tbs), chopped
  Eggs 2 , hard cooked, peeled and chopped
  Sweet relish 1⁄4 Cup (4 tbs)
  Salt To Taste
  Pepper To Taste

1. In a 4-qt. sauce pot add in the potatoes, cover with water, and bring to a boil over high heat. Reduce heat to low and simmer for 10 minutes or until tender.
2. Drain and cool slightly.
3. In a large bowl combine the mayonnaise, apple cider vinegar, pepper, celery, onion, eggs, and relish.
4. Add in the potatoes to the bowl and mix all the ingredients together. Season with salt and pepper.

5. Garnish with celery and chives and serve.
