Zero Calorie Cucumber Salad
|Olive oil||3 Tablespoon|
|Chopped chervil/Parsley||2 Tablespoon|
|Wine vinegar||3 Tablespoon|
Peel 2 cucumbers and cut in two lengthwise.
Remove seeds and slice crosswise into very thin slices.
Place on a wooden board and salt generously.
Leave for 1/2 hour.
Drain and press in a soft towel or kitchen paper to remove liquid.
Shake vigorously in a screw-topped jar 3 tablespoons olive oil, 3 tablespoons wine vinegar, 2 tablespoons chopped chervil or parsley, and a quantity of freshly ground pepper.
Pour over cucumbers.
