Cucumber and Onion Salad
|Cucumbers||4 Medium, peeled and thinly sliced|
|Bermuda onions||2 Large, thinly sliced|
|Chopped fresh mint/Parsley||1 Cup (16 tbs)|
|Red wine||1⁄2 Cup (8 tbs)|
|Salad oil||1 Cup (16 tbs)|
|Shallots/Green onions||5 , minced|
Arrange cucumbers in an overlapping circular pattern on a large salad plate.
Scatter onions over cucumbers.
In a jar with a tight-fitting lid, combine vinegar, oil, shallots, salt, and pepper.
Shake to blend.
Drizzle salad dressing over vegetables.
Sprinkle with chopped mint.
