Cucumber And Onion Salad

Ingredients
  Cucumbers 4 Medium, peeled and thinly sliced
  Bermuda onions 2 Large, thinly sliced
  Chopped fresh mint/Parsley 1 Cup (16 tbs)
  Red wine 1⁄2 Cup (8 tbs)
  Salad oil 1 Cup (16 tbs)
  Shallots/Green onions 5 , minced
  Salt To Taste
  Pepper To Taste
Directions

Arrange cucumbers in an overlapping circular pattern on a large salad plate.
Scatter onions over cucumbers.
In a jar with a tight-fitting lid, combine vinegar, oil, shallots, salt, and pepper.
Shake to blend.
Drizzle salad dressing over vegetables.
Sprinkle with chopped mint.
