Potato Salad

Ingredients
  Cooked potatoes 1 Pound
  Finely chopped onion 1 Tablespoon
  Seasoning To Taste
  Mayonnaise 4 Tablespoon
  Single cream/Top of the milk 1 Tablespoon (Adjust Quantity As Needed)
  Lettuce 1
  Red pepper strips 6 (For Garnish)
  Green pepper squares 6 Small (Diamond Shapes, For Garnish)
Directions

Dice the potatoes, add the onion and seasoning.
Thin the mayonnaise with a little single cream or top of the milk and add to the potato mixture.
With a fork toss the mixture until the potatoes are well coated with the mayonnaise.
Serve on a bed of lettuce and garnish with strips of red pepper and diamonds of green pepper.
