Succotash Rice Salad

Ingredients
  Cooked basmati rice 2 1⁄2 Cup (40 tbs), cooked without fat or salt
  Cooked baby lima beans 1 3⁄4 Cup (28 tbs), cooked without fat or salt
  Frozen whole kernel corn 1 3⁄4 Cup (28 tbs), thawed
  Low fat low salt ham 3⁄4 Cup (12 tbs), diced
  Thinly sliced celery 3⁄4 Cup (12 tbs)
  Finely chopped onion 3⁄4 Cup (12 tbs)
  Chopped fresh cilantro 1⁄4 Cup (4 tbs)
  Fat free ranch style dressing 1⁄2 Cup (8 tbs)
  Lime juice 2 Tablespoon
  White wine vinegar 1 Tablespoon
  Ground oregano 1⁄2 Teaspoon
  Freshly ground pepper 1⁄2 Teaspoon
  Tomatoes 3 Medium, sliced
Directions

Combine first 7 ingredients in a large bowl; toss lightly, and set aside.
Combine Ranch-style dressing and next 4 ingredients; add to rice mixture, and toss lightly.
Cover and chill thoroughly, stirring occasionally.
To serve, place tomato slices on a serving platter; spoon rice mixture over tomato.
