Green Beans A La Nicoise
|Olive oil||1⁄2 Cup (8 tbs)|
|Onion||1 , sliced thin|
|Canned italian plum tomatoes||1 Cup (16 tbs)|
|Green pepper||1⁄2 , chopped|
|Chopped celery||1⁄2 Cup (8 tbs)|
|Water||1⁄4 Cup (4 tbs)|
|Freshly ground black pepper||1⁄4 Teaspoon|
|Dried chervil||1⁄2 Teaspoon|
|Green beans||1 Pound, cooked until tender and drained|
1. In a skillet heat the oil, add the onion and cook until golden brown. Add the tomatoes, green pepper, celery, water, salt and pepper.
2. Tie the cloves, bay leaf, parsley and chervil in a small cheesecloth bag and add to the vegetables. Simmer, uncovered, about twenty-five minutes. Add the beans and continue simmering until the beans are hot. Remove the spice bag.
