Marinated Citrus Fish Salad

Ingredients
  White fish fillets 500 Gram, cut into strips
  Pink peppercorns 2 Teaspoon
  Orange rind 2 Teaspoon
  Canned lychees 400 Gram, drained
  Orange 1 , peeled and segmented
  Grapefruit 1 , peeled and segmented
  Fresh watercress 1⁄2 Bunch (50 gm)
For marinade
  Grape seed oil 1 Tablespoon
  Orange juice 125 Milliliter (1/2 Cup)
  Grapefruit juice 1 Tablespoon
  Lime juice 1 Tablespoon
  Tarragon vinegar 1 Tablespoon
  Grated fresh ginger 1 Teaspoon
Directions

1.Place fish in a glass bowl with peppercorns and orange rind.
2.To make marinade, combine oil, orange, grapefruit and lime juices, vinegar and ginger.
Pour marinade over fish, cover and refrigerate overnight.
3 To serve, remove fish with a slotted spoon to a bowl.
Add lychees, orange and grapefruit segments to fish mixture.
Toss lightly to combine.
Arrange watercress on a plate and top with fish salad.
Spoon over a little of the marinade.
