Orange Gelatin Salad
|Carrots||2 Medium, peeled and shredded|
|Orange||1 , peeled and sectioned|
|Fresh orange juice||1 1⁄2 Cup (24 tbs)|
|Water||1 1⁄2 Cup (24 tbs)|
|Plain gelatin||1 Tablespoon|
Combine the shredded carrots, orange sections, and 3/4 cup of the orange juice; set aside.
Soften the gelatin in a little warm water and add the remaining orange juice and water.
Combine the gelatin mixture with the carrot mixture, mixing well.
Refrigerate the gelatin in a small baking pan until set.
Cut into small squares and serve on a bed of shredded lettuce.
