New Potato Salad with Herb Dressing
|New potatoes||25 Ounce, scrubbed (700 Gram)|
|Green beans||6 Ounce, cut into 5cm lengths (175 Gram)|
|For the dressing|
|Extra virgin olive oil||3 Tablespoon|
|Lemon||1 Small, zest grated and juice extracted from 1 small lemon|
|Chopped mint||2 Tablespoon|
|Chopped parsley||1 Tablespoon, chopped|
|Snipped chives/Snipped chervil||1 Tablespoon|
1. Bring a pan of salted water to the boil. Add the potatoes, then boil for 8 mins. Add the beans, then cook for a further 4-5 mins or until both are just tender.
2. Meanwhile, whisk all of the dressing ingredients together, then season well.
3. Drain the beans and potatoes well, then cut the potatoes in half. Toss with the dressing while still hot. Cover and chill until ready to serve. Bring to room temperature before serving.
