Egg Salad In Lettuce Cups
|Homemade mayonnaise||4 Tablespoon|
|Celery stalks||3 , finely chopped|
|Chives/5 green onions||10 , finely chopped|
|Freshly ground black pepper||To Taste|
|Butter lettuce leaves||6|
|Onion sprouts||1⁄4 Cup (4 tbs)|
|Chives||1 Tablespoon (For Garnish)|
Place the eggs in a pan filled with enough cold water to cover them.
Bring the water to a boil, then lower the heat to medium and cook for 15 minutes.
Drain the hot water and run the hard boiled eggs under cold water until cool enough to peel.
Dice the peeled eggs and place in a bowl.
Add the remaining salad ingredients, adjusting the seasonings.
Place a large dollop of egg salad in each lettuce leaf, garnish with a few onion sprouts, if desired, and additional chives.
Fold it up like a taco and enjoy.
