Endive Salad With Beets
|Belgian endives||1 Pound, cut in small pieces|
|Cooked beets||1⁄2 Pound, julienned|
|Salad oil||2 Tablespoon|
|Lemon juice||1 Tablespoon (Of 1 Lemon)|
Wash and dry the endives.
Cut in 1-inch pieces.
Toss with the beets, seasoning to taste, oil, and lemon juice.
Garnish with parsley.
