Endive Salad With Beets

Ingredients
  Belgian endives 1 Pound, cut in small pieces
  Cooked beets 1⁄2 Pound, julienned
  Salad oil 2 Tablespoon
  Lemon juice 1 Tablespoon (Of 1 Lemon)
  Salt To Taste
  Pepper To Taste
Directions

1.
Wash and dry the endives.
Cut in 1-inch pieces.
2.
Toss with the beets, seasoning to taste, oil, and lemon juice.
Garnish with parsley.
