Marinated Bean Tuna and Tomato Salad
|Canned cannellini beans||40 Ounce (2 Cans Of 20 Ounce Each)|
|Olive oil||1⁄4 Cup (4 tbs)|
|Fresh lemon juice||1 Tablespoon|
|Freshly ground pepper||To Taste|
|Canned tuna||13 Ounce, drained and separated into chunks (1 Can)|
|Tomatoes||2 Medium, chopped|
|Onion/2 green onions||1 Small, minced|
|Chopped fresh parsley||2 Tablespoon|
Place beans in colander and rinse thoroughly with cold water .
Dry on paper towels and transfer to large serving bowl.
Combine oil, lemon juice, oregano, salt and pepper in small bowl or jar with lid and stir or shake well.
Pour over beans.
Add tuna, tomatoes, onion and parsley and toss gently to combine.
Chill well before serving.
