Stuffed Tomato Salad

Ingredients
  Tomatoes 4 Medium
  Cottage cheese 1 3⁄4 Cup (28 tbs)
  Chopped chives 2 Tablespoon
  Salt 1⁄2 Teaspoon
  Paprika 1⁄4 Teaspoon
  Crisp escarole head 2
  French dressing 1⁄2 Cup (8 tbs)
Directions

1. Wash the tomatoes, cut out stem ends and remove pulp and seeds, leaving walls intact.
2. Mix the chopped tomato pulp with cheese, chives, salt and paprika. Fill the stuffing into the tomatoes.
3. Arrange each on a bed of escarole.
