Lentil Salad With Fresh Herbs
|Water/Vegetable cooking liquid / broth||5 Cup (80 tbs)|
|Dried lentils||1 Pound|
|Chopped red onion||1 Cup (16 tbs)|
|Garlic||4 Clove (20 gm), peeled and chopped|
|Celery rib||1 , chopped|
|Carrot||1 , chopped|
|Sweet basil||1 Teaspoon|
|Chopped parsley||1⁄2 Cup (8 tbs)|
|Green onions||5 , minced|
|Green pepper||1 , chopped|
Bring water to a boil in a large kettle; add remaining ingredients, except green onion and green pepper.
Turn heat down, cover, and simmer 1 1/2 hours or until lentils are tender.
You may need to add a little water as lentils cook.
Pour dressing over cooked lentils.
Let cool and refrigerate.
Add salt and pepper as desired and garnish with onions and green pepper before serving.
