Marinated Mushroom Salad

Ingredients
  Roasted red capsicums 8 , skinned and cut into thick strips (Peppers)
  Mushrooms 4 Ounce, sliced (125 Gram)
  Herb and garlic dressing 1 Tablespoon
  Basil 1 Tablespoon, chopped
  Parsley 1 Tablespoon, chopped
  Garlic 2 Clove (10 gm), crushed
  Lemon juice 2 Tablespoon
  Red wine vinegar 2 Tablespoon
  White wine vinegar 2 Tablespoon
  Safflower oil 2 Tablespoon
Directions

1. Whisk together basil, parsley, garlic, lemon juice, red and white wine vinegars and oil.
2. Place red capsicums (peppers) and mushrooms in a bowl. Pour over dressing. Toss. Cover. Marinate in the refrigerator for 3 hours.
