Mom's Bulgur Salad
|Bulgur wheat||1 Cup (16 tbs) (Cracked Wheat)|
|Boiling water||2 Cup (32 tbs)|
|Green onion||1⁄2 Cup (8 tbs), chopped|
|Carrot||1⁄2 Cup (8 tbs), diced or grated|
|Celery||1⁄2 Cup (8 tbs), diced|
|Tomatoes||2 , sliced|
|Alfalfa sprouts||1⁄2 Cup (8 tbs)|
|Parsley||2⁄3 Cup (10.67 tbs), minced|
|Black pepper||To Taste|
Pour boiling water over wheat in a small bowl; cover and let stand about 30 minutes.
Place fluffed bulgur into a large serving bowl.
Let cool completely.
Salt lightly to taste.
Add remaining ingredients.
Pour dressing over the salad and correct seasonings.
