Mom's Bulgur Salad

Ingredients
  Bulgur wheat 1 Cup (16 tbs) (Cracked Wheat)
  Boiling water 2 Cup (32 tbs)
  Salt To Taste
  Green onion 1⁄2 Cup (8 tbs), chopped
  Carrot 1⁄2 Cup (8 tbs), diced or grated
  Celery 1⁄2 Cup (8 tbs), diced
  Tomatoes 2 , sliced
  Alfalfa sprouts 1⁄2 Cup (8 tbs)
  Parsley 2⁄3 Cup (10.67 tbs), minced
  Black pepper To Taste
Directions

Pour boiling water over wheat in a small bowl; cover and let stand about 30 minutes.
Drain.
Place fluffed bulgur into a large serving bowl.
Let cool completely.
Salt lightly to taste.
Add remaining ingredients.
Pour dressing over the salad and correct seasonings.
