|Hard cooked eggs||4|
|Minced celery||1⁄4 Cup (4 tbs)|
|Grated onion||1⁄4 Teaspoon|
|Minced parsley||1 Tablespoon|
|Mayonnaise||1⁄2 Cup (8 tbs)|
1. Chop the eggs; mix with the celery, onion and parsley. Blend with mayonnaise.
2. Arrange the salad in mounds on lettuce and water cress.
