Encore Pork Salad

Ingredients
  Canned red kidney beans/Garbanzo beans 16 Ounce, chilled (1 Can)
  Cooked lean pork/Chicken/turkey/beef 8 Ounce, cubed (1 1/2 Cups)
  Sliced celery 1⁄2 Cup (8 tbs)
  Chopped onion 1⁄4 Cup (4 tbs)
  Chopped pepper 1⁄4 Cup (4 tbs) (Green Or Sweet Yellow)
  Reduced calorie salad dressing 1⁄2 Cup (8 tbs) (Russian Or French)
  Shredded lettuce 4 Cup (64 tbs)
  Tomatoes 2 , cut into wedges
  Green pepper rings 4
Directions

Drain beans. In a large bowl combine beans, cubed meat, celery, onion, and green or yellow pepper. Add dressing and toss to coat. Arrange lettuce on 4 salad plates. Top with pork mixture and tomatoes. Garnish with green pepper rings, if desired.
