Potato Salad With Green Pea Mayonnaise
|Peas||1 Cup (16 tbs) (frozen)|
|Baby new potatoes||1 Kilogram|
|Peas||1 Cup (16 tbs), frozen|
|Sour cream||1⁄2 Cup (8 tbs)|
|Mayonnaise||1⁄2 Cup (8 tbs)|
|Garlic||2 Clove (10 gm), crushed|
|Mint||2 Tablespoon, chopped|
|Chives||2 Tablespoon, chopped|
Boil or steam potatoes until just tender drain, refresh under cold water, drain refrigerate until ready to mix with the mayonnaise.
Add peas to boiling water, cook 5 minutes, drain, refresh under cold water until completely cold, drain.
Puree or process peas with sour cream, mayonnaise, garlic, mint and chives until smooth, spoon over potatoes.
