Whole Wheat Macaroni Salad With Cheese Dressing

Ingredients
  Whole wheat macaroni 2 Cup (32 tbs)
  Boiling water 4 Cup (64 tbs) (Or As Needed)
  Oil 1 Tablespoon
  Green beans 1 Pound, cut into 1-inch pieces to make approximately 2 cups
  Diced carrots 2 Cup (32 tbs)
  Chopped parsley 2 Tablespoon
  Chopped green onions 1⁄2 Cup (8 tbs)
  Dill 1⁄2 Teaspoon
  Basil 1⁄2 Teaspoon
  Salt 1 Teaspoon
  Black pepper 1⁄2 Teaspoon
  Cottage cheese 1 Cup (16 tbs)
  Ricotta cheese 1 Cup (16 tbs)
  Prepared mustard 2 Teaspoon
  Lemon juice 2 Tablespoon
Directions

Cook macaroni in plenty of boiling water to which 1 tablespoon oil has been added.
Drain and rinse with cold water.
Cook green beans and carrots according to preferred method.
Drain if necessary.
Combine the macaroni, beans, carrots and seasonings.
Process cottage cheese and ricotta in electric blender.
Add mustard and lemon juice and blend until smooth.
Toss macaroni mixture with cheese dressing until ingredients are well coated.
Chill and serve.
