Rice And Spinach Salad

Ingredients
  Long grain rice 2 1⁄2 Cup (40 tbs)
  Oil 2 Tablespoon
  Green onions 1 Bunch (100 gm), chopped
  Frozen chopped spinach 10 Ounce, thawed and well drained (1 Package)
  Salt To Taste
  Pepper To Taste
Directions

In a medium-size saucepan bring 4 cups salted water to a boil.
Keep the water simmering while adding the rice; cover and cook 15 minutes until rice is soft and water is absorbed.
In a large skillet, heat oil and cook green onions 3 to 4 minutes; stir into rice.
Add spinach, salt and pepper to rice.
Stir together and heat through 1 to 2 minutes.
Serve warm garnished with a slice of lemon.
Alternatively, allow rice to cool before serving.
