Low Calorie Molded Cheese Salad

Ingredients
For mold
  Low calorie lime flavored gelatin 3 Ounce (1 Envelope, Four 1/2 Cup Servings, 8 Calories Per Serving)
  Boiling water 1 Cup (16 tbs)
  Cold water 1⁄2 Cup (8 tbs)
  Swiss cheese 2 Ounce, shredded
For dressing
  Cottage cheese 2⁄3 Cup (10.67 tbs)
  Mayonnaise 2 Tablespoon
  Salt 1 Dash
  Pepper 1 Dash
  Powdered mustard 1 Dash
  Lettuce leaves 4
  Tomato 1 Medium, cut into 8 wedges
  Shredded carrot 1⁄2 Cup (8 tbs)
  Shredded zucchini 1⁄2 Cup (8 tbs)
  Canned crushed no sugar added pineapple 1⁄2 Cup (8 tbs) (For Garnish)
  Lemon juice 1 Tablespoon (For Garnish)
  Chopped green onion 2 Tablespoon (For Garnish)
  Salt To Taste
  Pepper To Taste
Directions

Mold:
In large heatproof bowl dissolve gelatin in boiling water; stir in cold water.
Add remaining ingredients for mold and combine thoroughly.
Spray 1-quart mold with nonstick cooking spray and pour in gelatin mixture; cover with plastic wrap and refrigerate until firm, about 3 hours.
Dressing:
In blender container combine cottage cheese, mayonnaise, and seasonings; process until smooth, about 1 minute.
Transfer mixture to small serving dish and stir in scallion; cover and refrigerate until ready to serve.
