Alfa Alfa Stuffed Tomato Salad

Ingredients
  Tomatoes 4 Medium
  Torn lettuce leaves 4
  Alfalfa sprouts/Other filling 1 Cup (16 tbs)
  Cucumber 1 Small, sliced
  Fresh mushrooms 4 Large, sliced
  California dressing 1⁄2 Cup (8 tbs) (Adjust Quantity As Needed)
Directions

Remove stems from tomatoes. Partially cut each tomato into 6 or 8 wedges, almost through to the bottom.
Place each tomato on a bed of lettuce leaves on individual salad plates. Gently spread wedges apart. Pile 1/4 cup sprouts in center of each tomato. Arrange cucumber and mushroom slices alternately around tomato.
Serve with California Dressing.
