Alfa Alfa Stuffed Tomato Salad
|Torn lettuce leaves||4|
|Alfalfa sprouts/Other filling||1 Cup (16 tbs)|
|Cucumber||1 Small, sliced|
|Fresh mushrooms||4 Large, sliced|
|California dressing||1⁄2 Cup (8 tbs) (Adjust Quantity As Needed)|
Remove stems from tomatoes. Partially cut each tomato into 6 or 8 wedges, almost through to the bottom.
Place each tomato on a bed of lettuce leaves on individual salad plates. Gently spread wedges apart. Pile 1/4 cup sprouts in center of each tomato. Arrange cucumber and mushroom slices alternately around tomato.
Serve with California Dressing.
