Fruit Salad Jam
|Apples/Green mangoes / cooking apples||8 (Tahitian Variety)|
|Sliced banana||2 Cup (32 tbs)|
|Cubed pineapple||2 Cup (32 tbs)|
|Pawpaw||2 Cup (32 tbs), cubed|
|Passion fruit pulp||1⁄2 Cup (8 tbs)|
|Orange||1 , rind grated|
|Lemon juice||2 Tablespoon|
Wash apples or mangoes, cut up (leave skin on apples but peel mangoes).
Just cover with water and boil till soft.
Strain in a cloth.
Reserve the juice and put in large pan.
Add the cut-up fruit, pulp, grated rind and lemon juice.
Bring to the boil and cook 5 minutes.
Remove and measure the fruit and liquid.
Add 1 cup of sugar to every cup of fruit and juice.
Boil till testing a small amount in a saucer shows that the jam will set.
