Beet And Apple Salad With Yogurt Dressing
|Young beets||10 Ounce (5 Small Ones)|
|Plain yogurt||3⁄4 Cup (12 tbs)|
|Lemon juice||2 Teaspoon|
|Apples||2 Medium, cored and diced|
|Yellow onion||1⁄2 Small, peeled and chopped|
1. Peel the uncooked beets and halve them. Cut each half into 1/8-inch slices.
2. In a serving bowl, combine the yogurt, salt, sugar, lemon juice, and mayonnaise. Add the beets and apples, and toss until they are nicely coated with the yogurt mixture. Top with the onion and serve.
