Pear Raspberry Cottage Cheese Salad
|Ripe pears||2 Medium|
|Lettuce leaves||4 Teaspoon|
|Lemon juice||1⁄2 Teaspoon|
|Cottage cheese||1 Cup (16 tbs)|
|Seedless red raspberry jam/Red currant jelly||1⁄3 Cup (5.33 tbs)|
|Fresh raspberries/Red seedless grapes||1⁄4 Cup (4 tbs)|
Cut each pear in half; remove core.
Slice each pear half into 4 slices.
Arrange 4 slices on each of 4 lettuce-lined plates.
Brush cut surfaces of pear slices with lemon juice.
Spoon 1/4 cup cottage cheese onto each plate next to pear slices.
Melt jam in small saucepan over low heat, stirring constantly.
Spoon over cottage cheese and pear slices.
Garnish with raspberries.
