Perfect Protein Salad
|Butter lettuce head||2 Large|
|Carrot||1 Medium, sliced|
|Peanut||1⁄2 Cup (8 tbs) (Spanish Style)|
|Chopped parsley||3 Tablespoon|
|Sunflower seeds||2 Tablespoon|
|Wheat germ||2 Tablespoon|
|Unsweetened granola type cereal||2 Tablespoon|
|Bean sprouts||1⁄2 Cup (8 tbs)|
|Shredded jack cheese||1⁄2 Cup (8 tbs)|
|Plain yogurt||3⁄4 Cup (12 tbs)|
|Salad oil||3 Tablespoon|
|Lemon juice||1 1⁄2 Tablespoon|
|Hard-cooked eggs||2 , quartered|
Line a large serving bowl with outer leaves of lettuce.
Tear inner leaves into bite-size pieces.
Place in bowl and mix with mushrooms, carrot, and peanuts.
Sprinkle in parsley, wheat germ, sunflower seeds, cereal, sprouts, and cheese.
In a small bowl, blend yogurt, oil, and lemon juice.
Pour dressing over salad; toss gently.
Season to taste with salt and pepper.
Peel, pit, and slice avocado.
Garnish salad with eggs and avocado slices.
