Winter Salad

Ingredients
  Head of lettuce 1 , washed
  Cooked beetroot 4 Small, sliced
  Eggs 4
  Fennel bulb 1 Small, trimmed
  Parsley sprigs 1 Tablespoon, washed
  Olive oil 3 Tablespoon
  White wine vinegar 1 Tablespoon
  Ground black pepper To Taste
  Salt To Taste
Directions

Break lettuce into small shreds and arrange on a serving platter.
Add cress, beetroot, eggs, fennel and parsley.
Toss gently.
Mix together the oil, vinegar and seasoning.
Pour over salad to serve.
