Kidney Bean And Egg Salad

Ingredients
  Imitation mayonnaise 1⁄4 Cup (4 tbs)
  Prepared mustard 2 Teaspoon
  Onion 4 Ounce, finley diced
  Celery 1 Cup (16 tbs), diced
  Canned red kidney beans 12 Ounce, drained
  Cucumber 1 Medium, pared and sliced
  Lettuce leaves 4
  Eggs 4 Medium, hard-cooked and quartered
  Capers 1 Teaspoon
Directions

In bowl combine first 4 ingredients in order given.
Add kidney beans and diced cucumber; chill.
Divide evenly onto lettuce leaves; surround each with one egg and 1/4 of the cucumber slices.
Garnish with capers.
