Farmhouse Salad

Ingredients
  Cream cheese 12 Ounce
  Cheddar cheese 1 Cup (16 tbs), grated
  Cream 1⁄4 Cup (4 tbs)
  Pepper red 1⁄4 Cup (4 tbs), chopped
  Scallions 1⁄4 Cup (4 tbs), chopped
  Pine nuts 1⁄4 Cup (4 tbs)
  Lemon juice 3 Teaspoon
  Paprika 1⁄4 Teaspoon
  Head of lettuce 1
  Tomatoes 3
  Chives 1 1⁄2 Tablespoon, chopped
Directions

Beat the cream cheese until smooth, add Cheddar and cream and mix until well blended.
Stir in the pepper, scallions, pine nuts, lemon juice and paprika.
Spread the mixture in a small freezer tray and chill until firm.
Wash and shred the lettuce and cut the tomatoes into wedges.
Place the lettuce on a serving dish and arrange the tomato wedges on top.
Remove the cheese from the tray, cut into cubes and place them on the salad.
Sprinkle with chives and serve.
