Grated Beet And Caviar Salad

Ingredients
  Raw beets 1 1⁄2 Pound, chilled
  White onion 1 Small, finely chopped
  Italian olive oil 2 Tablespoon
  Wine vinegar 2 Tablespoon
  Salt 1⁄4 Teaspoon
  Ground pepper 1⁄4 Teaspoon
  Sour cream 1 Cup (16 tbs)
  Horseradish 2 Tablespoon, grated
  Salmon caviar 8 Ounce
Directions

Peel beets and cut julienne.
Mix with onion, olive oil, vinegar salt and freshly ground pepper.
Combine sour cream and horse radish and mix thoroughly .
When ready to serve, drain beets.
Mound in rectangular shape on small platter
Carefully spread sour cream down center.
Cover with salmon caviar
