Jerusalem Artichoke Salad
|Hard-cooked eggs||2 , sliced|
|Green onion with tops||3 , thinly sliced|
|Mayonnaise||1⁄2 Cup (8 tbs)|
|Yogurt||1⁄4 Cup (4 tbs)|
|Lemon juice||1 1⁄2 Teaspoon|
|Chopped parsley||2 Tablespoon|
Steam scrubbed whole artichokes in as little water as possible until just tender (approximately 15 minutes).
Cool and slice thinly.
Combine remaining ingredients, toss with artichokes and serve.
