Spinach Salad With Tofu Dressing

Ingredients
For dressing
  Firm tofu 4 Ounce, drained
  Chinkiang vinegar/Red wine vinegar 1⁄4 Cup (4 tbs)
  Vegetable oil 3 Tablespoon
  Sugar 1 Tablespoon
  Soy sauce 1 Tablespoon
  Sesame oil 1 Tablespoon
  Chili oil 1 Teaspoon
  Minced garlic 1 Teaspoon
  Spinach 1 Pound, washed, stems removed, and leaves torn into bite-size pieces (1 Bunch)
  Bacon strips 5 , crisply cooked, drained, and crumbled
  Shiitake mushrooms/1/4 pound fresh mushrooms 4 , thinly sliced (Use Fresh)
  Sliced almonds 1⁄4 Cup (4 tbs), toasted
Directions

Place tofu in a blender.
Add remaining dressing ingredients and process until smooth and creamy.
Place spinach, bacon, mushrooms, and almonds in a salad bowl.
Pour dressing over salad and toss until spinach is evenly coated.
