Chicken Ham Salad Meal
|Cooked chicken||1 Cup (16 tbs), cut in small dice|
|Julienned cooked ham||1 Cup (16 tbs)|
|Anchovy fillets||8 , chopped|
|Medium cooked hot spanish sausage/Medium cooked hot italian sausage||1⁄4 Pound, sliced thin|
|Cold boiled potatoes||3 , diced small|
|Green pepper||1 , sliced thin|
|Belgian endive head||2 , sliced thin|
|Chopped scallions||1⁄4 Cup (4 tbs) (Including The Green Part, Green Onions)|
|Stuffed olives||6 , sliced|
|Ripe olives||6 , chopped|
|Chopped parsley||1⁄4 Cup (4 tbs)|
|French dressing flavored with garlic||1 Cup (16 tbs)|
|Hard cooked eggs||3 , shelled and chilled|
Gently mix, in a large bowl, all of the ingredients except the eggs.
Remove the yolks from the eggs and chop the whites coarsely to add to the salad.
Mound the salad on a serving platter lined with crisp lettuce.
Sieve the egg yolks over the ready-to-serve salad.
Garnish with little cherry tomatoes and radish roses.
