Easy Potato Salad
|Potato||7 Ounce, rinsed and patted dry (Do Not Pierce, 1 Medium Sized)|
|Hard cooked egg||1 , grated|
|Celery stalks||1 Small, finely chopped|
|Green onion||1 Small, finely chopped|
|Freshly ground pepper||1⁄8 Teaspoon|
|Bibb lettuce/Boston lettuce leaf||1 Large|
|Minced fresh parsley||1 Tablespoon (For Garnish)|
Cook potato on High on micro wave-safe rack until just done, but still firm, about 6 minutes.
Let cool 5 minutes.
Peel and cut potato into 1/2-inch dice.
Transfer potato to bowl.
Add mayonnaise, egg, celery, onion, salt and pepper and blend well.
Spoon onto lettuce leaf and sprinkle with parsley
Chill thoroughly before serving.
