Easy Potato Salad

Ingredients
  Potato 7 Ounce, rinsed and patted dry (Do Not Pierce, 1 Medium Sized)
  Mayonnaise 3 Tablespoon
  Hard cooked egg 1 , grated
  Celery stalks 1 Small, finely chopped
  Green onion 1 Small, finely chopped
  Salt 1⁄4 Teaspoon
  Freshly ground pepper 1⁄8 Teaspoon
  Bibb lettuce/Boston lettuce leaf 1 Large
  Minced fresh parsley 1 Tablespoon (For Garnish)
Directions

Cook potato on High on micro wave-safe rack until just done, but still firm, about 6 minutes.
Let cool 5 minutes.
Peel and cut potato into 1/2-inch dice.
Transfer potato to bowl.
Add mayonnaise, egg, celery, onion, salt and pepper and blend well.
Spoon onto lettuce leaf and sprinkle with parsley
Chill thoroughly before serving.
