Orange Grapefruit And Avocado Salad With Mint
|White grapefruit||1 Large|
|Ripe avocado||1 Small|
|Olive oil||3 Tablespoon|
|Salt||1⁄8 Teaspoon (Or To Taste)|
|Fresh mint leaves||8 , finely shredded|
|Romaine lettuce leaves||4 Large, shredded|
Peel the oranges and slice them into half-rounds.
Pare the grapefruit right down to the flesh, removing not only the peel but also the outer membrane, and slice the flesh into quarter-rounds; remove any seeds.
Put the fruit into a shallow salad bowl.
Peel the avocado and slice it into half-rounds.
Immediately toss it with the citrus fruit to keep it from turning color.
Add the oil, salt, and shredded mint, and toss again.
Put the shredded romaine on top and refrigerate the salad, without tossing it again (so the lettuce will stay crisp) until ready to serve.
