Frozen Plum & Yogurt Salad
|Sliced plums||1 1⁄4 Pound (Fresh Ones, 2 1/2 Cup)|
|Honey||2 Tablespoon (Or More To Taste)|
|Unflavored yogurt||1 Cup (16 tbs)|
|Fresh blueberries||1⁄4 Cup (4 tbs)|
|Chopped pecans/Walnuts||1⁄2 Cup (8 tbs)|
|Banana||1 , sliced|
|Assorted fresh fruits||1 Cup (16 tbs) (Sliced Peaches, Strawberries, Grapes, Blueberries)|
Bring plums, honey and sugar to a boil in a saucepan. Reduce heat and simmer 5 minutes until soft. Remove from heat. Stir in yogurt and blueberries. Add more sweetener, if desired, depending on tartness of plums. Let cool.
Add chopped nuts and banana to saucepan, stirring gently. Spoon into twelve standard-sized paper-lined muffin tins. Place muffin tins in a plastic bag and seal, or cover with foil. Freeze until firm.
Remove from freezer 15 minutes before serving. To serve, arrange lettuce leaves on serving plates. Place a Frozen Plum & Yogurt Salad in center (in paper liner). Surround with assorted fresh fruits. Serve as is, or with Fresh Peach Dressing.
