Fresh Balsamic Fig Vinaigrette using fresh herbs
Ingredients
  Balsamic vinegar 1⁄2 Cup (8 tbs) (Aged Is Great)
  Extra virgin olive oil 1⁄4 Cup (4 tbs)
  Finely chopped fresh oregano 1 Tablespoon
  Finely chopped thyme 1 Tablespoon (Fresh Ones)
  Dijon style mustard 1 Tablespoon
  Garlic 2 Clove (10 gm), peeled and finely chopped or through garlic press
  Fresh fig 1 , peeled and mashed up using fork
  Salt To Taste
  Pepper To Taste
Directions

Combine balsamic vinegar, fresh herbs, garlic, mustard and a pinch of salt & pepper (to taste). Mix together using whisk or fork. Slowly drizzle half of olive oil into dressing and whisk together. Peel and mash fig into dressing and mix together. Finally, taste and add more olive oil and salt/pepper to your preferred taste.
