Chicken, Shrimp, And Fruit Salad
|Cooked cubed chicken/Turkey||2 Cup (32 tbs)|
|Seedless green grapes||1 Cup (16 tbs), halved|
|Cubed cantaloupe melon/Honeydew melon||1 Cup (16 tbs)|
|Canned water chestnuts||8 Ounce, drained (1 Can)|
|Canned shrimp||4 1⁄2 Ounce, drained, rinsed (1 Can)|
|Mayonnaise/Salad dressing||1⁄3 Cup (5.33 tbs)|
|Lemon juice||1 Tablespoon|
For salad, in a large bowl combine cooked chicken or turkey, halved grapes, cubed cantaloupe or honeydew melon, water chestnuts, and shrimp. Cover and chill for several hours.
For dressing, in a small bowl mash the banana. Stir in the mayonnaise or salad dressing and the lemon juice. Cover; chill for several hours.
If desired, arrange lettuce leaves on plates. Serve salad atop lettuce. Drizzle with dressing.
