Honeydew Melon Salad

Ingredients
  Tomatoes 1 Pound (500 Gram)
  Honeydew melon 1 , peeled (Use Ripe Ones)
  Ripe honeydew melon 1 , peeled
  Cucumber 1
  Olive oil 4 Tablespoon
  Lemon juice 2 Tablespoon
  Chopped tarragon 1 Tablespoon
  Chopped parsley 1 Tablespoon
  Chopped chives 1 Tablespoon
  Lettuce leaves 4
  Salt To Taste
  Pepper To Taste
Directions

Set aside a few tomato slices for garnish.
Skin and chop the remainder, discarding the seeds.
Dice the melon and cucumber.
Combine the melon, cucumber and tomatoes in a bowl.
Blend together the oil, lemon juice, herbs, and salt and pepper to taste.
Spoon over the salad and mix well.
Cover and chill for 2 to 3 hours.
Arrange the lettuce in a bowl and pile the salad on top.
Garnish with the tomato slices to serve.
