Pork And Bean Salad
|Rotated pork tenderloin with spicy texas rub||1|
|Vinegar oil salad dressing||1⁄2 Cup (8 tbs)|
|Chili powder||1⁄2 Teaspoon|
|Ground cumin||1⁄4 Teaspoon|
|Canned black beans||15 Ounce, rinsed and drained (1 Can)|
|Canned kidney beans||15 Ounce, rinsed and drained (1 Can)|
|Corn kernels||1 Cup (16 tbs) (Fresh / Frozen)|
|Diced tomato||1 Cup (16 tbs) (Fresh)|
|Green bell pepper||1 , diced|
|Diced red onion||1⁄4 Cup (4 tbs)|
|Chopped fresh cilantro/Parsley||1⁄4 Cup (4 tbs)|
|Mixed lettuce greens||6 Cup (96 tbs)|
|Slightly crushed corn chips||1 Cup (16 tbs)|
|Corn chips||1 Cup (16 tbs), slightly crushed|
Cut the rotated pork into strips and place in a large bowl.
Whisk together the salad dressing, ketchup, chili powder and cumin.
Toss with pork and set aside while preparing the remaining ingredients.
Toss together the beans, corn, tomato, green pepper, onion and cilantro.
Add to the pork and toss well.
Arrange a bed of lettuce on serving plates and top with pork salad.
Garnish with corn chips.
