Pork And Bean Salad

Ingredients
  Rotated pork tenderloin with spicy texas rub 1
  Vinegar oil salad dressing 1⁄2 Cup (8 tbs)
  Ketchup 2 Teaspoon
  Chili powder 1⁄2 Teaspoon
  Ground cumin 1⁄4 Teaspoon
  Canned black beans 15 Ounce, rinsed and drained (1 Can)
  Canned kidney beans 15 Ounce, rinsed and drained (1 Can)
  Corn kernels 1 Cup (16 tbs) (Fresh / Frozen)
  Diced tomato 1 Cup (16 tbs) (Fresh)
  Green bell pepper 1 , diced
  Diced red onion 1⁄4 Cup (4 tbs)
  Chopped fresh cilantro/Parsley 1⁄4 Cup (4 tbs)
  Mixed lettuce greens 6 Cup (96 tbs)
  Slightly crushed corn chips 1 Cup (16 tbs)
  Corn chips 1 Cup (16 tbs), slightly crushed
Directions

Cut the rotated pork into strips and place in a large bowl.
Whisk together the salad dressing, ketchup, chili powder and cumin.
Toss with pork and set aside while preparing the remaining ingredients.
Toss together the beans, corn, tomato, green pepper, onion and cilantro.
Add to the pork and toss well.
Arrange a bed of lettuce on serving plates and top with pork salad.
Garnish with corn chips.
