Citrus Scallop Salad
|Sea scallops||1 1⁄2 Pound|
|Spinach||1⁄4 Pound, torn into bite-size pieces|
|Kiwifruit||2 , peeled and sliced|
|Oranges||2 Medium, pared and sliced|
|Citrus dressing||1 Tablespoon|
1. If scallops are large, cut into halves. Mix scallops and salt in 2-quart casserole. Cover tightly and microwave on high 6 to 9 minutes, stirring after 4 minutes, until scallops are white in center; drain. Cover and refrigerate at least 2 hours until chilled.
2. Drain scallops; toss with spinach and fruit. Drizzle with Citrus Dressing.
