Chicken Salad With Capers
|Chicken breasts||24 Ounce, cooked (2 Whole, 12 Ounce Each)|
|Chopped celery||1⁄2 Cup (8 tbs)|
|Finely chopped onion||2 Tablespoon|
|Mayonnaise/Salad dressing||1⁄3 Cup (5.33 tbs)|
|Lemon juice||1 Tablespoon|
|Drained capers||2 Tablespoon|
1. Remove skin and bones from the chicken breasts; cut meat into generous pieces (you should have about 3 cups).
2. Combine chicken, celery and onion in a medium-size bowl. Blend mayonnaise or salad dressing with lemon juice; add to chicken mixture with capers, salt and pepper. Toss well to coat. Chill well.
