Savory Crab Louis
|Cos lettuce||1 , separated into leaves|
|Crabmeat||1 Pound, flaked (500 Gram)|
|Tomatoes||2 , thinly sliced|
|Cucumber||4 , thinly sliced|
|Eggs||4 , hard boiled and thinly sliced|
|Mayonnaise||8 Fluid Ounce (250 Milliliter)|
|Olive oil||3 Tablespoon|
|Lemon juice||1 Tablespoon|
|Tomato ketchup||2 Tablespoon|
|Worcestershire sauce||1 Teaspoon|
|Chives||1 Tablespoon, freshly chopped|
|Parsley||1 Tablespoon, freshly chopped|
|Black pepper||To Taste|
|Double cream||3 Fluid Ounce (75 Milliliter)|
First make the dressing.
Mix all the ingredients together, with salt and pepper to taste, in a mixing bowl.
Chill for 30 minutes.
Line a salad bowl or serving dish with the lettuce leaves.
Pile the crabmeat in the centre and spoon over the dressing.
Arrange the tomato, cucumber and egg slices around the crabmeat and garnish with the capers.
