Bacon Spinach And Avocado Salad

Ingredients
  Back bacon 8 Ounce (250 Gram)
  Young spinach 6 Ounce (175 Gram)
  Pine nuts 1 Ounce (25 Gram)
  Avocado 1⁄2 , sliced
  Danish blue cheese 2 Ounce, crumbled (50 Gram)
  Carrot 1 , coarsely grated
For dressing
  Lemon 1⁄2 , juiced
  Olive oil 3 Tablespoon
  Mustard powder 1 1⁄2 Pinch (Good Pinch)
  Salt To Taste
  Pepper To Taste
Directions

1. Cut the bacon into strips and fry in its own fat until crisp. Leave in the pan and set aside.
2. Tear the spinach leaves into small pieces and mix with the remaining salad ingredients in a serving bowl.
3. Shake all the dressing ingredients together in a screw-top jar. Pour into the pan with the bacon and heat gently.
4. Pour over the salad and toss well. Serve immediately, with plenty of warm crusty bread.
