Cold Beet Salad
|Medium||1 1⁄4 Pound|
|Raspberry wine vinegar/Red wine vinegar||3 Tablespoon|
|Vegetable oil||2 Tablespoon|
|Grated orange peel||2 Teaspoon|
1. Prepare and microwave beets. Slice beets.
2. Mix vinegar, oil, sugar and salt in 1 1/2-quart casserole. Microwave uncovered on high about 1 minute or until hot. Stir in beets.
3. Cover and refrigerate at least 3 hours, stirring occasionally, until chilled. Sprinkle with orange peel.
